A large, erect to spreading evergreen tree with a thick central trunk and big glossy leaves clustered at the branch ends. Its football-shaped fruits have a rough, woody, russet-brown skin and dense salmon-pink to red flesh with a sweet, almond-like flavour, around a single large glossy seed. The fruit takes over a year to ripen after flowering and is an important commercial crop in Mexico, Central America, the Caribbean and south Florida.

Worth knowingA mamey sapote fruit takes 13 to 24 months to ripen after flowering, and the seeds lose their ability to germinate within one to two weeks of leaving the fruit. Grafted trees begin bearing in 3–5 years and a mature tree can carry 200–500 fruits a year.
