Tamarind

A large, slow-growing evergreen legume tree with a dense dome-shaped crown of fine, feathery leaves that fold up at night. Small pale yellow flowers veined with red hang in loose clusters and are followed by velvety brown pods filled with a sweet-sour paste around hard seeds. That paste has been used as a food ingredient for thousands of years and is the souring agent in Worcestershire sauce and many curries.
