A fast-growing, vine-like climbing cactus with three-winged green stems that scramble over trees, rocks or a trellis using aerial roots. Its enormous, fragrant white flowers open for a single night, and are followed by pink or yellow scaly fruits with white or magenta flesh speckled with tiny black seeds. Plantings begin fruiting within a year of planting from cuttings and can stay productive for around twenty years.

Worth knowingEach flower opens for only one night, so growers hand-pollinate in the dark or early morning; a three- to four-year-old plant can yield about 100 kg of fruit a year.
