A small evergreen tree with glossy leaves that emerge bright red and turn green as they age. Its inner bark is the source of true cinnamon, stripped from young trees, dried and hand-rolled into quills. The spice has been used since antiquity, including in ancient Egyptian embalming, and the tree is now grown across the tropics.

Worth knowingTrue cinnamon quills are made by stripping, polishing, stretching and layering the inner bark of trees only 2–5 years old, then rolling it by hand; the cheaper cassia sold as cinnamon comes from other Cinnamomum species.
